Lemon Gooey Self Sauce Pudding

1 Cup Self-Raising Flour
1/2 Cup Caster Sugar
220g Caster Sugar
125g Butter (Room Temperature)
4 Eggs Separated (Room Temperature)
4 X Frozen Naked Rivals 100% Lemon Juice Cubes, Thawed
75 G Plain Flour
310g Full Cream Milk
Icing Sugar, Cream or Ice-Cream, To Serve


  1. Preheat the oven to 170°C (fan-forced).
  2. Grease an ovenproof casserole/baking dish and set aside (minimum of 2 litre/8cup capacity). 
  3. Beat the caster sugar and butter together until pale and creamy. 
  4. Beat in the egg yolks one by one. 
  5. Beat in the lemon juice, plain flour, and full cream milk. Set aside. 
  6. Beat the egg whites until firm peaks have formed. Gently mix through the lemon mixture with a spoon. 
  7. Pour into the prepared casserole/baking dish.
  8. Place the dish into a large pan and fill halfway up the side with boiling water (to create a water bath around the baking dish). 
  9. Bake for 30 minutes or until lightly golden and firm on the top and a sauce has formed underneath (it should be wobbly at the bottom).
  10. Dust with icing sugar and serve while warm with cream or ice-cream.
