Haloumi Avocado & Lime Salad

Ingredients

Servings:  4
Preparation:  10 minutes
Cooking time:  10 minutes

Dressing:

2 Cubes Of Naked Rivals Lime Juice, Thawed
1 Tbs Balsamic Vinegar
2 Tbs Olive Oil
1 Garlic Clove, Minced

Salad:

100g Halloumi
2 Large Handfuls of Salad Greens (Rocket, Lambs Lettuce, Baby Spinach Etc.)
2 Tbs Sesame Seeds
1 Avocado Sliced
½ Cup of Cherry Tomatoes, Cut in Half
¼ Red Onion, Sliced

Method

Dressing:

  1. Add all ingredients to a jar, close and shake until all the ingredients are integrated.


Salad:

  1. Slice the halloumi into thin strips. Add it to a pan on a medium to high heat and let it cook for a few minutes on each side until golden.
  2. While the halloumi is cooking, plate your greens, avocado, tomatoes and red onion.
  3. When the Halloumi is done, at to the top of the plated salad and then add the seeds to the pan. Let them cook for a few minutes until toasted and plump.
  4. Give the dressing jar one last shake before you drizzle over the salad and sprinkle with toasted seeds before you serve.


Handy Tip:
If the lime cube hasn’t melted through, don’t worry, just put the jar aside while you prepare the salad and then give the jar a shake before you serve.
