Fresh Fruit Skewers

Ingredients

Servings:  10-12
Preparation:  20 minutes
Cooking time:  0 minutes

Dressing

2 X Frozen cubes of Naked Rivals Lemon Juice
½ Tsp Sugar
¼ Tsp Salt
¼ Tsp Ground Mustard
1/8 Tsp Onion Powder
Freshly Ground Pepper
¼ Cup Extra Virgin Olive Oil
5 Tsp Fresh Minced Basil

Skewers

Skewers
4 Cups Large Cubes of Fresh Fruit (Pineapple, Strawberries, Kiwifruit, Peaches, Cherry Tomatoes, Figs, Grapes)
½ Cucumber, Shaved
½ Cup Baby Bocconcini
½ Cup Cooked Prawns

Method

Dressing:

  1. Add all ingredients excluding the basil to a jar, close and shake until all the ingredients are integrated. Stir in basil.

Skewers:

  1. Thread each fruit one by one onto the skewer, dividing each piece of fruit with either cucumber, bocconcini or a prawn. Make it colourful.
  2. Plate up the skewers.
  3. Give the dressing jar one last shake before you drizzle over the skewers before you serve.

Handy Tip: If the lemon cube hasn’t melted through, don’t worry, just put the jar aside while you prepare the salad and then give the jar a shake before you serve.
