Fish with Chilli Mango & Lime Salsa

Ingredients

Salsa

1 X Frozen Naked Rivals 100% Lime Cube
2 ripe Mangoes, cheeks removed, peeled, finely chopped
1 long fresh red Chilli, halved, deseeded, thinly sliced
2 tbsp chopped fresh Coriander
Salt & Pepper to taste

Salmon

1 tbsp olive oil
4 (about 220g each) skinless salmon fillets 

Handy Tip:  A good accompaniment to the meal is a side of rice or cooked asparagus.

Method

Dressing:

  1. Combine the lime juice, mango, chilli, and coriander in a bowl. Taste and season with salt and pepper.

Salmon:

  1. Heat oil in a non-stick frying pan over medium-high heat. Season salmon with salt and pepper.
  2. Cook for 3-4 minutes each side or until just cooked through.
  3. Divide the salmon among serving plates. Top with salsa and serve.


Handy Tip:
  If the lime cube hasn’t melted through, don’t worry, just put salsa aside while you prepare the salmon and then give bowl a mix before you serve.
