Lime and Mint Granita with Watermelon

Servings:  4, makes 2½ cups
Preparation:  20 minutes
Cooking time:  2 minutes

Ingredients

200g chilled watermelon, sliced
Small mint leaves to serve (optional)

GRANITA

375ml (1½ cups) water
165g (¾ cup) caster sugar
16g mint leaves on stem
9 cubes of Naked Rivals lime juice, thawed

Method

  1. For the Granita, combine water and sugar in a medium saucepan and stir over medium heat until sugar dissolves and mixture is warm. Remove from the heat.
  2. Add mint and press to submerge. Set aside to infuse for 15 minutes.
  3. Remove mint and discard. Add lime juice and stir well.
  4. Transfer mixture to a small deep tray. Freeze for 3-4 hours or until solid.
  5. When ready to serve, place watermelon on serving plates. Use a fork to scrape the surface of granita into fine ice crystals. Working quickly, top watermelon with granita and a few small mint leaves if liked.

Storage:

Store granita in the freezer for up to 2 months.

Handy Tip:

For a boozy adults-only version, add ¼ cup of your favourite summer spirit to the mix before freezing – gin, tequila or rum work nicely.
